Vegan rice paper rolls with tofu, mango and peanut

These delicious, spicy vegetarian rice paper rolls are also vegan as they are 100% plant based. It is really easy to make as it does not need to be heated. Plus, it's just a great way to get raw vegetables. Even most children love to eat vegetables this way as they themselves can be allowed to build up their rice paper roll. They are good for lunch, as a starter and for a main course. The taste balance is amazing and I promise you they will make happiness in most mouths.

 

Vegetarian rice paper rolls:

Rice paper (as many as you can eat)

Cabbage or white cabbage

spinach

2 mangoes

1 pack of smoked tofu (can be bought in Aldi)

1 bunch of coriander

Shiracha

 

Peanut sauce

2 tbsp. peanutbutter

Juice from half a lemon

3 tbsp. soy sauce

1 tbsp. water

1 cloves of garlic

 

Method:

1. Prepare the scallion, spinach and mango by cutting into thin slices. Also cut the smoked tofu into thin slices.

2. Pick the coriander leaves.

Make peanut sauce by blending all the ingredients together until the sauce is completely creamy.

4. Everyone in the family can fill the rice paper with what they want in. Remember that they must be soaked in water first. If you have not tried it before, there are helpful tutorials on YouTube.
